Food Preservation Methods

Dehydrated

  • Dehydrating via sun or air drying, microwaving, dehydrators etc.
  • Easiest & cheapest method of preservation. Removes ~90% of moisture content.
  • Lasts 4 - 24 months with proper storage.
  • Loses ~10% nutrients in the process. Vitamin A & C are broken down by high temperatures.
  • Appearance of food drastically changes, altering the texture, color & taste.
  • Nutrient loss due to heat exposure.

Frozen

  • Food is frozen & stored below 0°C temperatures to preserve.
  • Requires pre-treatment, cryo-protection, dipping / heating, freezing & frozen storage.
  • Lasts 4 - 6 months with proper storage.
  • Process only retains the original quality of prepared food.
  • Time and temperature affect the overall texture, color, & taste.
  • Retains most of the nutrients & flavor.

Retort

  • Pressurized vessels used to sterilize foods, & sealed in cans or special pouches.
  • Uses high heat (Thermal Decontamination) to destroy microorganisms & increase shelf life.
  • Average shelf life between 18 - 36 months.
  • Process retains most nutrients of the original ingredients used.
  • Longer heat exposure affects appearance & food texture.
  • Can be stored at room temperature.

Vacuum Freeze Drying

  • Moisture is removed from foods by specialized vacuum systems.
  • Frozen at very low temperatures to turn water into ice, then removed by sublimation.
  • Shelf life can be up to 25 years.
  • Up to 97% nutrient retention. No exposure to high heat retains all vitamins & minerals.
  • No change in flavor & tastes like fresh food. The color & shape remain intact.
  • Lightweight & can be stored at room temperature.
